
Matcha Firs
285g Flour
200 g Cold Butter
100g Powdered Sugar
1 Egg
10 g Matcha (Japanese Green Tea Powder)

White Chocolate and Sugar Sprinkles, Cocoa Butter
Sift flour and matcha together. Add the butter cut into pieces, the beaten egg and the sugar and knead into a smooth dough. Roll out the dough between cling film to about 4mm thick and chill for at least 1 hour. Cut out fir-shapes and place on a baking tray lined with baking paper. Bake in the oven preheated to 170°C (top/bottom heat) for about 15 minutes, placing an empty baking tray over the tray with the fir trees to prevent excessive browning. Allow to cool completely. Heat the white chocolate in a water bath and add enough cocoa butter until the mixture runs liquid from a spoon. Dip the fir trees diagonally about halfway into the chocolate icing and let them cool slightly. Then drop the sugar pearls into the still soft icing.
